Learn how to make two delicious condiments from local garlic scapes. Garlic scapes — the flowering stem of hardneck garlic — are tasty, FODMAP-friendly, and have all the benefits of garlic without the smell. Atina’s Garlic Scape Pickle was a 2021 Good Food Award Winner, praised for its crunchy texture and flavorful spices.Garlic Scape Dust, made from dried fermented scapes, is a perfectly umami, slightly salty finishing seasoning you will love. You will start both in this hands-on workshop, taste the creations together with a meal, and bring your project jars home to ferment along with instructions for finishing them yourself.
This workshop will be led by Carrie Dashow and Suresh Pillai of Atina Foods. It will be held at our certified commercial kitchen on our small farm property. Opportunities to tour the farm and shop at our Atina Home Store will also be available.
