Kit includes:
Jar of freshly toasted and handmilled spices ready to ferment about 1.5 lbs fresh good quality vegetables of your choice.
Instructions to Lacto-ferment with just salt (no vinegar / no water), in the Kerala, South Indian style known as Uppilittathu.
Ing: Fenugreek, Mustard Seed, Asafoetida (GF), Chili Pepper. Our spices are freshly roasted and hand-milled.

Kit Does Not include: Mason Jar, we suggest a 16 oz / pint sized glass jar, with appropriately fitted lid.
HOW TO USE - Kit includes detailed instructions. Remember to keep everything super clean - hands and all utensils and bowls. We like to use vinegar to clean, and you can boil your utensils. Just use soap and water on your hands, boiling wouldn’t work : )
SALT - non iodized - We love to use Himalayan sea salt - choose your own.
Goal: use 2 - 2.25% of the weight of your vegetable. A Percentage Calculator helps.
as this kit is good for 1 - 1.5 lb of veg, here are the calculations - note: this amount of salt is the amount to use even without our kit!
1 lb vegetable calculation (= 16 ounces) :
2% = .32 oz (1.92 teaspoons)
2.25% = .36 (2.26 teaspoons) .
Average that at 2 teaspoons of salt for 1 lb veg!
1.5 lb vegetable calculation (24 oz)
2% = .48 oz (2.88 teaspoons)
2.25% = .54 (3.24 teaspoons) .
Averages at 3 - 2.25 teaspoons for 1.5 lbs of Veg!
